Filos Feta D.O.P.

This is probably the best-known Greek cheese. A couple of years ago Feta became a Protected Designation of Origin (P.D.O.) product. Only those cheeses are allowed to be named Feta which are produced in precisely defined regions of Greece (among others Macedonia, Thessaly, Epirus, Lesbos). Feta is made from ewe’s milk and a small share of goat’s milk. Its paste is firm, yet a bit crumbly and the taste is spicy and salty. Hardly any Greek dish can do without Feta. Take it for stuffing, in salads or for gratinating.
