A Greek “whey cheese” made from ewe’s and goat’s milk. Regarding character, Manouri is similar to Feta. It is, however, finer, creamier and less salty. It is produced mainly in Macedonia and Thessaly. Since 1996 Manouri has been a P.D.O. product. It is a white cheese without rind, shaped into rolls. It tastes mild and has a light aroma of whey and milk. It is well suited for gratinating, for salads and, in particular, for preparing sweets and desserts.
