Apart from Manchego, IBERICO is the most popular cheese in Spain. It is a semi-hard cheese made from “mixed milk”.
The making of cheese from different kinds of milk has a long-standing tradition in Spain. Almost half of all cheese varieties are made from a milk mix. Cow’s milk is mixed with goat’s milk or ewe’s milk or as in the case of the Iberico, it is made from a mix of cow’s, ewe’s and goat’s milk. Cow’s milk accounts for the quantity and the basic taste, goat’s milk stands for the color and the slightly piquant aroma, and, last but not least, ewe’s milk improves the cheese in terms of texture, flavor and fat content.
In most cases, Iberico is sold as a young cheese with at least 2-3 months of ripening. It has got a light color and an aromatic taste.
Try it with quince jelly. Simply delicious.
