Toggenburger goat cheese

Toggenburger goat cheese has a long history of production in the foothills of the Alps in the eastern part of Switzerland. Since the middle of the 18th century Toggenburger goats have been renowned and appreciated. The farmers have been raising them in exercise pens ever since. In summer, the goats graze free-range on the mountain pastures or pastures nearby. The mixture of grass and fine alpine herbs in combination with the clean air provide the ideal basis for breeding this indigenous race.

“Ziegenkönig” is made from thermised goat’s milk of this special breed. This natural cheese with its rustic golden-brown rind ripens up to 5 months. The interior color can vary from ivory to whitish shade; its texture is best described by soft and easy to cut. Depending on the degree of ripeness, the flavor ranges from delicate and fine to downright strong and spicy.
