County Wexford is located in the very southeast of Ireland. The warming Gulf Stream produces a particularly mild climate in this region full of lush green meadows. In the midst of these picturesque surroundings you can find CARRIGBYRNE FARM, where a great variety of artisan cheese products is made. One of these products is the delicious and full-flavored ST. KILIAN.
It is a soft cheese with a bloomy white rind made from freshly-pasteurized cow’s milk coming from the farm’s own herd. Its hexagonal shape adds an extraordinary touch.
The interior is slightly creamy in color, the texture being lightly melted. At an early stage of maturity this cheese has a slightly buttery taste, which in the ripening process turns into a very creamy and aromatic flavor.
